One situation that has touched my life is dire and something that I need to pay close attention to. Something I need to truly care about. But because it involves the lives of other family members, I cannot discuss it here, in this forum. &lt;br /&gt;&lt;br /&gt;I wish I had the gift of magic this week, to be able to wave a magic wand and take away the pain that others in my extended family are feeling. I find myself wanting to swoop in like Superwoman to right everything that is wrong. I want to throw my arms around them all to comfort them and make the pain go away. Why does life for some have to be so painful.&lt;br /&gt;&lt;br /&gt;Unfortunately, I am not a caped crusader, and real life is not so easily solved. No two-hour story with a fairy-tale ending. Life is hard, damned hard at times. Sometimes life comes at you full on and knocks you down. You must try with everything you have, to gut it out and pick yourself back up again, and move forward. &lt;br /&gt;&lt;br /&gt;Being on the sideline, is difficult when you care so very much. But I need to do the little things...to help. Things like writing, supporting, listening, loving and not judging. This is January for goodness sake. I am accustomed to walking out everyday to 20° as a high temp and -20° as a low. I am accustomed to a foot of snow on the ground and more often like five foot of snow that has accumulated from December to January. We normally have days of waiting for snow plows to dig out our neighborhood streets. The sound of snowblowers buzzing has been missing.&lt;br /&gt;&lt;br /&gt;Don't think I am complaining...not a bit. I am thrilled with 40° to 50° and even 60° in the afternoon IN JANUARY! We may drop to 20° at night, but I am not complaining. In fact I think I can count on one hand the number of times I have even had to scrape my windows. Did I mention this is in OMAHA, in JANUARY!?&lt;br /&gt;&lt;br /&gt;Yesterday I wore a light jacket to work. When I went home for lunch, I left it there. No need for a jacket. Nearly every visitor to our office was remarking on how absolutely beautiful the day was.&lt;br /&gt;&lt;br /&gt;On my way home, I was drawn to the park by the tall trees catching the late sun. It is a struggle to find things to shoot indoors at night after I get home. The sun goes down so quickly and the objects in my house become targets to consider for macro-photography. &lt;br /&gt;&lt;br /&gt;A photo of a kerosene lamp was scary when I over-filled the lamp and the flame almost became too hot. I had to quickly blow out the lamp and remove some of the kerosene. He never catches them but he gave one a run for his money today. &lt;br /&gt;&lt;br /&gt;I wish it was a tiny bit warmer. 13° makes my fingers hurt shooting (with my camera) outside right now. My target this weekend will be to shoot the feral cats and get a better look at the feline "city wildlife" that live in and around this area. I have to admit that they are probably the reason that we have not seen a mouse or bunny rabbits in the area for the last 2 years. &lt;br /&gt;&lt;br /&gt;I also shot some &lt;i&gt;food porn&lt;/i&gt; this week which always makes me happy. It combines my photography and cooking hobbies and that is always a good thing. I wish I could link the photo to the tantalizing smells in my kitchen when I am cooking. But I have other hobbies and one of my favorites is photography. My friend L in Savannah was doing a Photography Challenge for this year with her friends. I liked the idea so much, I stole it...or rather copied it (after all she is still doing her challenge.) The challenge is a photo per day (at least, can be more) for each day of the year 2012. It is Leap Year, so I am going to take at least 366 photos and post them to my &lt;a href="http://flickr.com/photos/vikianderson "&gt;Flickr acct.&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://3.bp.blogspot.com/-cXliVHm-LJA/TxMQBnerhoI/AAAAAAAAFmI/S8naGZaFKqQ/s1600/IMG_1693_sm.jpg" imageanchor="1" style="margin-left:1em; margin-right:1em"&gt;&lt;img border="0" height="320" width="213" src="http://3.bp.blogspot.com/-cXliVHm-LJA/TxMQBnerhoI/AAAAAAAAFmI/S8naGZaFKqQ/s320/IMG_1693_sm.jpg" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;br /&gt;I like this challenge a lot because although I have always enjoyed photography, I have never felt that I have excelled at it. I want the opportunity to make myself learn more about it. I want to force myself to see differently. To speak with pictures. They say a picture is worth a thousand words. Well from someone who loves the written word...that in itself is a challenge. What will I say with my photos? What will I discover? &lt;br /&gt;&lt;br /&gt;I am always inspired by how young people see the world...without the filters of adulthood. Hanging out with my grandkids and children at the school that I work at, remind me of this and forces me to look again. I am grateful for their vision. I will try to remember their wonder as I pick up my camera with more thought and from many perspectives.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Challenge II - 52 Blog Pages in 2012&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;Oh and I also think that I have been neglecting my writing hobby as well. So maybe I better get back into the groove. I gave myself a photo per day...I can give myself a blog page a week challenge... my 52 in 2012 Blog Challenge.  This is Week 3 and I did write a blog page on Jan 3rd. I am only missing Week 2, so maybe I write another page this week to make up for it. &lt;br /&gt;&lt;br /&gt;Nextly...I feel that I have to challenge someone. &lt;br /&gt;&lt;br /&gt;Some of my "Friend" blogs that have pretty good fan bases, have their followers because they write more than I do. Oh yea...and they also write well. Their pages are actually interesting.&lt;br /&gt;&lt;br /&gt;Do they have more to say? Do they have more interesting lives that provide more blog fodder? Perhaps. I guess I need to be more reflective and creative. I think life at age 56 is still an adventure and I am still discovering myself. It is our way to reboot ourselves, give ourselves hope, take stock in ourselves and generally say goodbye to anything bad that has happened to us. I think this is a really good thing. Resolutions? No way... a resolution implies there is something wrong with us to begin with and then sets us up for failure.&lt;br /&gt;&lt;br /&gt;My good friend T suggests instead of committing to a new resolution, find your new word for the year, her word being "alive". Each day she is going to commit to celebrating her aliveness. &lt;br /&gt;&lt;br /&gt;I like this idea too. But what word can I truly commit to????&lt;br /&gt;&lt;br /&gt;I love words, they bring deep meaning to our lives. &lt;br /&gt;&lt;br /&gt;I had to laugh at my granddaughter J (14 yrs old) the other day as she wrote in her Facebook Page &lt;i&gt;"With are words where seeling are destineys."&lt;/i&gt; Her friend promptly responded &lt;i&gt;"What?"&lt;/i&gt; I giggled out loud and broke the grandma rule of not writing on my grandkids FB wall with &lt;i&gt;"Translation: With our words, we're seeing our destinies."&lt;/i&gt; After all, she was having a deep and meaningful thought and I thought she should be understood. She liked me, she really really liked me (ha) or liked my interjection at least. Later she wrote on her wall, "My grandma is the BOMB!!" Which made me cry with happiness.&lt;br /&gt;&lt;br /&gt;What word can bring meaning to the year 2012 as a whole for me, I am pondering. Happiness? Life? Relevance? &lt;br /&gt;&lt;br /&gt;Relevance...now that is a word. Be "RELEVANT"...Make a difference...Matter. This is a word I can admire. &lt;br /&gt;&lt;br /&gt;&lt;blockquote&gt;relevant  (ˈrɛlɪvənt)— adj&lt;br /&gt;1.  having direct bearing on the matter in hand; pertinent&lt;br /&gt;2.  linguistics another word for distinctive&lt;/blockquote&gt;&lt;br /&gt;Most of the time, I try to blend into the background. Being relevant may push me into my uncomfort zone. But the fact is, I do want to have a direct bearing on my life and those I love and care about in my life...I even want to make a difference in the lives that of those in my world that I can help in what ever way that I can.&lt;br /&gt;&lt;br /&gt;So I think that is the word I will adopt for the year 2012, relevant. Gift shopping is done. Wrapping is almost done. Next up is grocery shopping for dinner and starting my baking. &lt;br /&gt;&lt;br /&gt;This yearly ritual is tiring and crazy, but always welcome. Why do we put ourselves through this stress. We spend too much, we eat too much, we drink too much. Can you spell E X C E S S ?&lt;br /&gt;&lt;br /&gt;On the other hand, it brings my family together in hugs and smiles and love that can be shared and shared over and over. That alone is worth the stress. We did have an amazing week up at Tony &amp; Dona's in Minnesota even with the unbelievable heat. They have made their home into a sanctuary that anyone would want to make into a destination for relaxing. Had loads of fun junking and antiquing with Dona. We have many more shops to investigate next year. Stopped in Minneapolis to have breakfast with Lee and Marcy. They live in the Lyndale area which is an older section of Minneapolis.  Absolutely beautiful area. Interesting shops and restaurants with character. We went to the French Market Bakery which was scrumptious just walking through the door to smell the fresh baked breads. They have lots of organic and vegan choices included in a huge menu. I had the eggs benedict, but the french toast served on a table next to us was so yummy looking. Our trip home was a fast 6 hours from there. This just means that a run up to see Dona or Lee is really just a day trip if I want to zip up one more time before work starts again.&lt;br /&gt;&lt;br /&gt;Home again. Grilling out is almost a daily event. Meeting up with friends is always great. We have been chillin' at home a lot, but forced relaxation is not necessarily a bad thing at all. &lt;br /&gt;&lt;br /&gt;So am I ready to go back to the office? Not really, but when it happens, it is good to know that scheduling and updating CUM files is already done. Starting school is going to be a piece of cake this year. I am really not dreading it at all. I find that I am no longer tied to my tower. My Droid phone does nearly everything, and whatever it does not do, my iPad does the rest. Both are very portable and light. Okay, I admit, I will keep my computer, but I am finding less and less reason to actually use my computer.&lt;br /&gt;&lt;br /&gt;I am considering a Xoom next because it uses Flash where the iPad does not. I love discovering new apps for my mobile life. My latest addiction is Flipbook on iPad. What an amazing server of social life and lifestyle information. I started out adding Facebook and I loved how the posts and pictures were displayed. So I added Twitter and my Google Reader for all of my RSS feeds. So cool! Now I am adding my favorite Blogs like JP Villanueva's "&lt;a href="http://jpv206.wordpress.com/#!/cover"&gt;You Don't Have To Read v2.0&lt;/a&gt;". I found really cool content like National Geographic and Rolling Stone. I have to say goodbye to a dear friend, our 14 year old dog Shelby, who has bone cancer. He has gotten to that place that there is no turning back. He is in a lot of pain. It is hard for him to get up and down the stairs to go in and out of the house now and I cannot ask him to limp around for my benefit any longer. It is so sad. I cannot stand the thought of him going away today. He will be joining our beloved Sugar who was his playmate when he was a puppy. The add-ins are endless and so I have to share my latest and greatest:&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Quinoa &amp;amp; Oatmeal with Toasted Seeds and Dates&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;1. Toast up some pumpkin and sunflower seeds (and a few raisins LOL) in a skillet. This makes them aromatic and deliciously nutty. Precook about 1/4 cup of Quinoa (rinsed) in a Pyrex measuring cup with about 1/2 cup water. I cook it in the microwave for about 4-5 minutes.&lt;br /&gt;&lt;br /&gt;4. Cook 1/2 cup of Old Fashioned Oats in your favorite 2 quart pan with about 1 cup water and a sprinkle of salt. November arrived (temperature-wise) in the form of cold rain and sleet and even a little snow this morning. This one has that nifty protein laden quinoa added for a nutty taste. So my daughter Heather and I decided to take the kids to visit their great grand parents out of town so they could see the new baby.&lt;br /&gt;&lt;br /&gt;On the way up, Jocelyn asks “Grandma, do we have any vegetarians in our family?” I am sure I must have looked puzzled while answering…”Umm, no, I don’t think so.” She continued “Well we are singing for the vegetarians next week for chorus at school and we are supposed to bring pictures of our vegetarians.”&lt;br /&gt;&lt;br /&gt;I thought for a moment confused as ever. That did not make any sense.  Then it dawned on me that soon the kids might be celebrating “Veteran’s  Day”.&lt;br /&gt;&lt;br /&gt;“Oh Jocelyn! You mean Veteran’s Day. Yes, as a matter of fact, Great Grandpa Ned is a Veteran and you can ask him about this when we get to their house.” I had to smile at this as it was such an adorable moment.&lt;br /&gt;&lt;br /&gt;So of course Great Grandpa Ned helped to explain what a veteran was to the children. And that there are many Veterans in our family including our most recent veteran, James who was just in Iraq. But it got real interesting when they were sounding out the word V-e-t-e-r-a-n and GGrandpa said it sounded kind of like Veterinarian, which is a whole other ball of wax. Sure, a lot of you will grate it up an put it into zucchini bread or slice it up and stir fry it peppers and onions etc. But have you ever made spaghetti with it? or hash browns?&lt;br /&gt;&lt;br /&gt;Today I used my handy "As Seen On TV" peelers that I got at my local Walgreens. Boy are they sharp, so be careful using them. I almost got myself good. Whew!&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://www.vikiandersonsites.com/food/20100810-zuc0.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="163" src="http://www.vikiandersonsites.com/food/20100810-zuc0.jpg" width="320" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;First I peeled the outer skin and discarded it. Then I used the nifty hashbrown peeler and quickly cut the zucchini into long spaghetti-like strands. The really cool thing is that you never have to deal with the zillions of seeds, because you cut down to where they are and stop. After you cut all the flesh from the zucchini, discard the left-over column of seeds in one big chunk. No seed mess!&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;/div&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://www.vikiandersonsites.com/food/20100810-zuc1.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="240" src="http://www.vikiandersonsites.com/food/20100810-zuc1.jpg" width="320" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://www.vikiandersonsites.com/food/20100810-zuc2.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="240" src="http://www.vikiandersonsites.com/food/20100810-zuc2.jpg" width="320" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;br /&gt;At this point you can do a whole lot of fun cooking.&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Sautee some up with olive oil, garlic, onions, peppers. Remove from heat and mix in some of your favorite pesto or marinara. &lt;/li&gt;&lt;li&gt;Lightly toss some in rice flour (regular flour is ok too) and fry them up for a plate of hash browns. I added some black sesame seeds for a nutty flavor. Salt and pepper as needed.&lt;/li&gt;&lt;li&gt;Steam some up. Season with olive oil or your favorite butter or spread and herbs for a quick side dish.&lt;/li&gt;&lt;li&gt;Use it as the base for a great casserole. A little cheese, a little butter...top with bread crumbs? What's not to like here. &lt;/li&gt;&lt;li&gt;Cut the strands into shorter pieces and add into any salad or cole slaw recipe.&amp;nbsp;&lt;/li&gt;&lt;li&gt;Pickle the shortened strands in your favorite pickling recipe.&lt;/li&gt;&lt;/ol&gt;&lt;br /&gt;I'll bet you can think of some great ideas to do with all this zucchini pasta.&lt;br /&gt;&lt;br /&gt;Move over fettucini! I went with a list in my head and came back with everything except mustard greens.&lt;br /&gt;&lt;br /&gt;When I got home, I went straight to the kitchen to make some guilt-free snacking, veggie chips out of kale and collard with olive oil, sesame seeds and sea salt.&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://www.vikiandersonsites.com/food/20100807-veggie_chips.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="240" src="http://www.vikiandersonsites.com/food/20100807-veggie_chips.jpg" width="320" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;br /&gt;Then I quartered up tomatoes, squeezed and seeded them, placed them cookie sheets with olive oil, herbs de provence, thyme and garlic. I then popped them into a 200° oven for a slow roast. When they are out of the oven, I packed them in olive oil, let them cool and refrigerated them. I had lightly brushed them with olive oil and seasoned them with salt and pepper.&lt;br /&gt;&lt;br /&gt;After they came out of the oven, I cut them into bite-sized chunks and added them to whole grain wheat couscous that I had flavored with hot veggie broth, let sit and then fluffed with a fork. This was really wonderful with layers and layers of flavor, very healthy and very filling. He knows that I love them and that is all the encouragement he needs to get his hands into the dirt. Yesterday he harvested about a dozen and a half of Fuji apple-sized tomatoes. They are beautiful, vine ripened and OMGD delicious!&lt;br /&gt;&lt;br /&gt;So of course that was the first thing I thought of for breakfast this morning. Tomato scramble with tofu and sweet bell pepper. I always add a bit of tumeric, celery salt, and basil to my scrambles. I decided to steamfry them with a combination of Napa Cabbage and regular Cabbage til the cabbage was wilted and soft but not coming apart.&lt;br /&gt;&lt;br /&gt;I soaked my Springroll Skin in warm water til soft and placed it on a damp paper towel. I then soaked another as I was working with the first one.&lt;br /&gt;&lt;br /&gt;I put a bit of Chinese Oyster Sauce in the middle and topped it with slivered scallions. Then I took the steam-fried cabbage and mushrooms and put that on top. I rolled them up burrito-style. Jerry is firing up the grill and barbecue (he is doing feather bones for everyone). I will be bring a few vegan choices to add to the table. I am making a chilled pasta with basil pesto, lemon, toasted pine nuts, diced cucumber and topped with chopped sun-dried tomatoes. I think some great chips and dips are in order as well. So I am making a black bean, tomato and green chili dip. I will also make a creamy hummus to bring along.&lt;br /&gt;&lt;br /&gt;This morning I found a great banana bread recipe at: &lt;a href="http://www.thekindlife.com/post/katie-bs-banana-breads"&gt;http://www.thekindlife.com/post/katie-bs-banana-breads&lt;/a&gt;. I twisted mine to use stuff I had on hand, so I added a mango and switched the agave syrup for palm sugar. My husband and I were watching the College World Series that is being held here in Omaha and the temperature on the field was nearing 110°. Friday our students at summer school held their field day and it was so hot that I nearly had heat stroke and had to come in off the field to cool down. That was a peculiar feeling to see everything begin to go black as I was swaying on my feet. I realized I was in trouble and headed inside to cool off.&lt;br /&gt;&lt;br /&gt;Needless to say, cooking over a hot stove just does not really cut it right now. I was looking for some cool ideas and cucumbers always make me cool. I had to think what would go well with this. My friend Gabi is from Bethlehem originally and is always telling me how good the middle eastern foods are. Cucumbers and mint, lemon juice and olive oil. Simple but delish! So I stacked up some spring greens that I got at the Farmer's Market yesterday, diced up a chilled cucumber and topped it all with a lemon and mint vinaigrette. To balance this out, with a little protein, I had bought a delicious bulk Falafal mix from World Market. One fourth cup of mix and a little water to make a dough. Shape into little balls, I flattened mine somewhat because I was pan frying them in some oil and did not want to deep fry them for such a few (I was only making one serving).&lt;br /&gt;&lt;br /&gt;I gotta say...this was sooooo good! So I feel like I should apologize to those of you who follow for other interests. &lt;br /&gt;&lt;br /&gt;Most of the posts from here on out will be recipes, food porn, and related health finds that I MUST share or the occasional squawk when I am feeling politically motivated. I would blog more about my day if it weren't so damned boring most of the time. Well ok, I am not really that bored, but I don't want to bore you.&lt;br /&gt;&lt;br /&gt;So I guess I will go to visit Minnesota this week at some point. We have a date with a fish. Although I am eating vegan these days, I do occasionally still eat fish as I stated in earlier posts on pescetarianism. &lt;br /&gt;&lt;br /&gt;I visited my Doc yesterday and he seemed very happy with my choice to eat vegan. As a diabetic, I am 4x likely to have heart and stroke issues. Vegan diets are heart happy and cholesterol free. At any rate, I had lost weight and my blood tests will be back tomorrow (I hope) to show if my new diet has made a significant change for the better yet. On the downside (literally) he scheduled me for a colonoscopy! It is a trail mix blend of toasted soy nuts,  almonds, pumpkin seed kernals and sweet dried cranberries. Nice mix.&lt;br /&gt;&lt;br /&gt;Then  yesterday I was at the Farmer's Market in downtown Omaha and bought a  big bunch of fresh spinach and other greens. I have a ton of greens to  make salads with, so I decided to make a pesto out of the spinach. But I  didn't have any pine nuts. I was about to run to the grocery when it  dawned on me to try the toasted soy nut mix in the pesto.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://www.vikiandersonsites.com/food/20100516-pesto_wb.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="268" src="http://www.vikiandersonsites.com/food/20100516-pesto_wb.jpg" width="320" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;In the  food processor:&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; Spinach leaves (cleaned and spun dry)&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; 1 1/2 cups soy  nut mix&lt;br /&gt;Mix until leaves are mostly processed&lt;br /&gt;&lt;br /&gt;add:&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp;  olive oil (I drizzled in enough to make a paste)&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp;  fresh squeezed  orange juice (I used the juice of 2 clementines)&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; sea salt (to  bring out the sweetness of the cranberries and orange juice)&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp;  cracked black pepper&lt;br /&gt;&lt;br /&gt;WOW was that yummy. Coming up  with a dredging batter that is dairy-free and egg-free was my goal here.&lt;br /&gt;&lt;br /&gt;1/2  cup whole grain rice flour (I used Bob's Red Mill)&lt;br /&gt;1 tsp baking  powder&lt;br /&gt;1/2 tsp baking soda&lt;br /&gt;1/2 cup rice milk (I used Rice Dream) &lt;br /&gt;Panko  Bread Crumbs&lt;br /&gt;9-12 large button mushrooms (or what ever mushroom/veggie you  prefer)&lt;br /&gt;&lt;br /&gt;Mix the rice flour, baking powder and baking soda. Add  rice milk until desired thickness, add more if needed. Coat mushrooms in  batter and finish in Panko Bread Crumbs.&lt;br /&gt;&lt;br /&gt;Fry in canola oil until  golden brown.&lt;br /&gt;&lt;br /&gt;Serve with Sesame Ginger Sauce. BUT... I am never hungry, in fact is seems I eat all the time LOL. I am finding that you have to eat a truckload of the green stuff to actually overeat. I don't watch calories, I don't count carbs. And eating bread (whole grain only) is tremendous when you don't have feel guilty. I have brown rice, polenta, oatmeal, barley, quinoa, really all sorts of whole grains that are good for you, fill you up and are naturally low-glycemic.  I am not really exercising any more than I did before (walking about 3   miles, 1-3 times a week).&lt;br /&gt;&lt;br /&gt;You would think that this would be a boring diet. Think again! The choices for vegans are huge. I rarely eat the same things and am actually making an effort to try a different veggie and fruit each day. The variety is amazing. If I don't know how to use a new veggie or fruit, I look it up on the net to get new ideas. I also have tried some meat replacements like Morningstar Farms Veggie Burgers and veggie based seitan which tastes like chicken chunks in stir-fries. Tonight is going to be fresh Shitake mushroom stir-fry with baby bok choy and a sesame ginger sauce served with jasmine brown rice. I feel like every day is gourmet food.&lt;br /&gt;&lt;br /&gt;Restaurants have been a pleasant surprise. I didn't know if they would have anything besides salads to order. I was very wrong. I recently went downtown to &lt;a href="http://dixiequicks.com/"&gt;Dixie Quicks&lt;/a&gt; and to a North Omaha gem...&lt;a href="http://www.vikiandersonsites.com/food/FinickyFranks.png"&gt;Finicky Franks&lt;/a&gt;, 9520 Calhoun Road, &lt;span class="value"&gt;402-451-5555.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span class="value"&gt;Chef René at Dixie Quicks made an amazing Vegan Chorizo &amp;amp; Tofu Scramble, served with a side of some deliciously seasoned black beans and a side of assorted fresh cut fruit, which had me wanting more even after I was stuffed! It tasted soooooo good!&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span class="value"&gt;Finicky Franks made me a gourmet veggie burger topped with grilled onions &amp;amp; peppers that was so delicious. I also had their mushrooms and a salad with lemon poppyseed dressing. This replaces your soil and elevates the garden. No weeding needed, no back breaking bending or hard on the knees kneeling. This blog is quickly becoming a vegan food porn site LOL. But I cannot help sharing great tasting, healthy recipes with you.&lt;br /&gt;&lt;br /&gt;I love eggs, that is a fact. But I cannot have eggs without sending my cholesterol to the moon. But I gotta tell ya, tofu scrambles have made my longing for eggs a thing of the past. They are delish! Tofu has the same consistency as egg white and takes on the flavors and spices you cook with it. I used my mortar and pestle to grind them together to a fine powder to add to the tofu which I added to the stir fry last. Gave it a quick toss to warm it to eating temp and served it.&lt;br /&gt;&lt;br /&gt;Note: you can also add nutritional yeast flakes (get them at Whole Foods or your favorite health foods store). They add a really tasty cheesy flavor that is fabulous! I have been pouring over them without being able to put them down. It is pretty clear that my food cravings were never for chocolate, sweets or meat so much. But cheese, now that is the thing that I could not seem to have a meal or a snack without. It never occurred to me that every morsel of cheese I was eating was so full of fat. This is the culprit, my daily drug if you will. Everyday it lured me back for more and more. Now that I have identified my main enemy, I can put it aside and I have. My blood sugars are coming down already and it has only been a couple weeks. I don't ever feel hungry because I can eat whenever I want. I don't have to stress over calories or carb counting (a huge relief) and I can have pasta without feeling like I robbed the carb store.&lt;br /&gt;&lt;br /&gt;A third book that I bought is Alicia Silverstone's "&lt;a href="http://www.amazon.com/Kind-Diet-Simple-Feeling-Losing/dp/1605296449"&gt;The Kind Diet&lt;/a&gt;". Her approach is so subtle and understanding of those of us who have so recently changed to this lifestyle. Her recipes are amazing and varied. I am beginning to think that I can actually pull this off. I am not pacing around wondering if I will backslide into eating a steak. Her website "&lt;a href="http://www.thekindlife.com/"&gt;The Kind Life&lt;/a&gt;" has been a great support and I love the forum which is quite active.&lt;br /&gt;&lt;br /&gt;I think it is so ironic that a few short years ago, I had gone the exact opposite direction with "The South Beach Diet" to help me with my diabetes. Long term though, I found it impossible to stay on that diet. I craved bread and cereals constantly. After initial positive results, I could not maintain the diet. My diabetes and high cholesterol conditions were worse than before and my weight loss was null and void as if I had not done it at all. In actuality, I had done more harm than good. Well I am rectifying that now. I plan to use a lot more fish in my diet and indulge with an  occasional bit of steak (like once a month). Bottom line, my cholesterol level MUST improve...or else.&lt;br /&gt;&lt;br /&gt;Tonight's solution:&lt;br /&gt;&lt;br /&gt;For Me: Sauteed in a little olive oil - zucchini sticks, red onion, sliced roasted red bell pepper, sliced sun-dried tomato. Served over a small portion of cooked and plated cheese tortellini. Garnish with fresh grated parmesan and toasted and crumbed garlic croutons.&lt;br /&gt;&lt;br /&gt;For Jeff: After I removed the sauteed veggies (I left in a tiny portion to flavor the meat), I stir fried a sliced up link of Italian sausage in the same pan, picking up the flavors of the caramelized veggies. I just need to incorporate them more into my day.&lt;br /&gt;&lt;br /&gt;Breakfast - I buzzed up a can of black beans, a handful of mushrooms, a half can of Rotel Tomatoes and peppers and a cup of leftover cooked whole grain rice. I heated this up and served it in a warmed up tomato flavored tortilla for a yummy bean breakfast burrito. I didn't really miss my eggs and bacon so bad. Oh and I have plenty of leftovers for bean dip with chips or more burritos.&lt;br /&gt;&lt;br /&gt;At my snack time I made a quick banana smoothie with vanilla soy milk.&lt;br /&gt;&lt;br /&gt;Late lunch was a Romain, mushroom, red onion, salad with a little Caesar Dressing, croutons, and a shake or two of fresh grated parmesan cheese. I had lost weight and was doing well. The trouble is, I was not able to stay on my low carb diet for life. I just don't want to have to work that hard at counting carbs and tracking every morsel of food that I put in my mouth. I just want to eat something tasty and not have to worry about it.&lt;br /&gt;&lt;br /&gt;This is hampered by the fact that being a diabetic, my intolerance for high glycemic foods screws up my blood sugar and reeks havoc with my overall health.&lt;br /&gt;&lt;br /&gt;I watched a program the other night on PBS on reversing diabetes. The speaker talked about vegetarian diets and how getting most of my proteins from vegetable sources could actually turn my diabetes around entirely. I think this is worth strong consideration. The problem is, I love meat.&lt;br /&gt;&lt;br /&gt;I love a good roasted meat: beef, pork or chicken. I have over the last few years moved to more turkey and fish in my diet, but perhaps I should move even further to fish only. I don't think I can give up meat entirely. But if I seriously stick to fish and seafood for the majority of my meals, I think I could actually wean myself of meat.&lt;br /&gt;&lt;br /&gt;The thing is, I am not doing this because I am on some sort of fad. My life is beginning to depend on it. My diabetes is simply not getting better, it is unfortunately getting worse. I have to face facts. Plant protein is healthier for me and creates less health problems.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;I have to get away from processed foods, meats and even my love of cheese that I indulge way too much of. I poured myself a cup of coffee to take with me thinking how I hate wasting perfectly good coffee. I went through the house turning off the lights. I put on my jacket and gathered up my lunch and purse.&lt;br /&gt;&lt;br /&gt;To my surprise, I went to grab my cup of coffee and it wasn't where I had left it. My forehead immediately produced those ugly frown lines between my eyes as I went off to backtrack my path through the house to discover where I had left my cup of coffee. My dogs were faithfully in my shadow as they accompanied me on my search. They broke into a run as they tried to keep up with me. We all ran into each other in the hallway when I did a quick turn around to go the opposite direction. I tried to de-tangle myself from the ball of legs and fur as I looked up at the clock frantically... it was now twenty-five after.&lt;br /&gt;&lt;br /&gt;"Damn, Damn, Damn-it!" You may find out that someone you care about deeply, is in fact, dying sooner than one would say was a proper length of life. You want desperately to help, but cannot. You try to "be there" for that person, but cannot "really" be in that person's shoes. You cannot know the feeling of a life battle that is losing. &lt;br /&gt;&lt;br /&gt;The knowing, makes it hard to carry on, conversation, daily life, just keeping pace as you always have. How is it possible with this giant gorilla in the room with everyone. ...and EVERYONE struggling for the right words.&lt;br /&gt;&lt;br /&gt;You clearly don't want to make things worse, but by trying so hard, do we make it worse in the struggle? Probably. But it cannot be helped. You can say too much, you can say too little. You can say the wrong thing, or even say the right thing, but at the wrong time. How many times can you say "I'm sorry" before even that rings empty and clueless. Firstly, I am trying harder to only buy fresh for the day I am going to use them, however that is not always the best way to take advantage of sales and quantity discounts. &lt;br /&gt;&lt;br /&gt;When I go to Costco for instance, I often buy in quantities that Jeff and I would be challenged to use up before spoilage. I sometimes am able to pass some of these great items on to my kids by sharing with them, but they are 20 miles away and it is not always easy to get things to them.&lt;br /&gt;&lt;br /&gt;So I am stuck with trying to figure out the best way to store things like cheese, fresh spinach or greens, mushrooms and other veggies. Over the years I have happened on to some tips that have saved my "freshies" for much longer than before and I am happy to share the knowledge.&lt;br /&gt;&lt;br /&gt;Fresh veggies are still alive. This is something that many people forget. They need to breathe. Don't mix that thought up with open air in the fridge as this will often dry them out. The FoodSaver folks would have you believe that everything needs to be vacuum sealed and void of air entirely. The plastic bin protects from the dry frigid air. But if too much condensation builds up and drips back on the greens, they start to get slimy as they begin to spoil. I therefore wipe dry the top of the lid daily. I also give them a light shake to loosen the leaves. I place one clean dry paper towel loosely on top of the greens and replace the lid. Side note on mushrooms: NEVER wash them under water or get them wet. They should be gently brushed off with a soft brush or paper towel to clean them. I have a airy basket for them. Now if you have huge quantities, vacuum sealing and/or freezing may make sense, but to extend the life of my cheeses, I have discovered that kitchen parchment paper is my friend. I take the cheese out of its original plastic wrap and re-wrap the cheese in parchment paper and then place it in a zip bag. This allows the cheese to breath and wick off excess moisture, but not dry out. The only cheese that I would not wrap this way would be a fresh mozzarella or type of moist/wet cheese. It works great for any dry cheese like Italian grating cheeses, cheddar, Swiss or Gouda.&lt;br /&gt;&lt;br /&gt;Fresh herbs are placed in a shallow vase with about 1/2 inch of water and placed into the fridge.&lt;br /&gt;&lt;br /&gt;There you have it, my favorite "freshie" tips. By now the winter is old and we are weary of it. Snowfall even though beautiful, fluffy and clean, is an unwelcome sight. Maybe if I was an avid skier or snowmobiler I might find something to celebrate. But with every new snowfall, I find my eyebrows knitting together in disgust. &lt;br /&gt;&lt;br /&gt;When? When will it be gone? I ache to see the sun and a little patch of green. I want feel a light warm breeze on my face while I go walking with my dogs instead of feeling the sharp bite of single digit temps and a wind that cuts through layers of clothes in minutes.&lt;br /&gt;&lt;br /&gt;I find myself daydreaming about daffodils and tulips, crab apple blossoms, lilacs and freshly mowed grass. Spring cannot get here fast enough. I'll lament the fast passage of time later. And...I passionately believe that to be true.&lt;br /&gt;&lt;br /&gt;Growing up Chinese-American, I often lamented that my mother's generation let go of their language in order to fit in to the American culture of the 40's &amp;amp; 50's. I understand, but I still feel like our generation somehow got cheated out of our heritage language. I was fascinated as a child to listen to my grandmother Ng Fong Hai, speak in her native Cantonese. At the same time, I was sad because I couldn't understand her. In the 50's and 60's, learning your heritage language was simply not a priority. Yes, I feel cheated.&lt;br /&gt;&lt;br /&gt;I wish now that my mom had felt that her heritage language had value instead of treated like something to be overlooked, forgotten or worse...ashamed of. Nowadays, being bilingual in corporations is a leg up the corporate ladder because we live in a global economy.&lt;br /&gt;&lt;br /&gt;My cousin Jeff went to live in Bejing for a year of his college to become bilingual with Mandarin Chinese. He is teaching his children by speaking Mandarin at home. I think he is giving his children a wonderful advantage that will ultimately broaden their lives.&lt;br /&gt;&lt;br /&gt;Learning language as a child is like learning to breath. My granddaughter Gabby is half El Salvadorian. Her parents see the importance of teaching her both languages.  At two, she often speaks to me in Spanish and English both. I am amazed at how effortless it is. Children have the capacity to learn and embrace as many languages as you want to teach them. I remember taking a  class as a child, but I never did anything with it later. I wish I had.&lt;br /&gt;&lt;br /&gt;&lt;blockquote&gt;"Growing up bilingual is a perfectly normal human state; being able to  speak, read, and write in more than one language is not harmful. I am trying very hard to learn Spanish. We have an ESL program, but no translators at the school. I am saddened when I hear others I work with cluck about wishing that "these people" would learn English. I am acutely aware of the political overtones. I remember how I felt the very first time I saw Star Wars when it first came out, it was such a fun futuristic swash-buckler that took us places we had never imagined. I remember the first time I saw Dances With Wolves and the incredible cinematography on the biggest screen in Nebraska at the amazing pre-IMAX Indian Hills Theater (unfortunately now gone.) Avatar ranks right up their with those movie experiences for me.&lt;br /&gt;&lt;br /&gt;Avatar seen on IMAX in 3D simply was jaw-droppingly amazing. I loved it. I don't know how James Cameron conceived of Pandora, but I wish there were such a place. So incredibly beautiful. The detail that was in that film was mind-blowing.&lt;br /&gt;&lt;br /&gt;The story was a sweet touchstone to Mother Nature and romance and a great justified battle to protect home and hearth and a culture worth saving. I laugh at those who read a political message into it. But that said, it is a great story of the little guy up against corporate greed. It is not a new story, but a new telling of it. So if you find yourself defending corporate greed and not enjoying the movie for what it is, you miss the point of seeing it at all. I look at all the horrible goings on in this world and have to note that were it not for religion, probably none of it would be taking place! Someone is a devout Muslim and feels a calling to blow himself up along with a plane full of innocent people just trying to get somewhere for the holidays. Another devout Muslim opens fire on his co-workers because he cannot reconcile his beliefs with his profession.&lt;br /&gt;&lt;br /&gt;Not to be outdone, a zealot Right to Lifer guns down a Doctor at the door of his church in an effort to save lives...ummm that one was beyond my comprehension. Others make themselves a menace at the funerals of  soldiers by picketing their religious beliefs to the anguished families of the fallen. I don't get it!&lt;br /&gt;&lt;br /&gt;Iran is a country tearing itself in two because of religion and human rights issues. 25 die in Karachi (Pakistan) suicide bombing on Shia Muslims' holy day of mourning. Afghanistan's people have endured years of strife due to the extreme beliefs that narrowly defined of an otherwise beautiful religion. An 85-year-old Holocaust survivor was among a group of grandmothers who began a hunger strike in Cairo on Monday to protest against Egypt's refusal to allow a Gaza solidarity march to proceed. Netanyahu wants Israeli force on Palestinian border. Oh boy, that will promote peace...NOT!&lt;br /&gt;&lt;br /&gt;In an effort to be fair, Chicago allowed a Menorah, a Nativity and a Freedom From Religion Sign in a State building (just as they did last year.) A Christian man became so enraged at the sign he took action to remove it. He was stopped. Christmas is a lovely holiday and the spirit behind it has a wonderful giving meaning. But the spirit quickly dissipates when someone takes that meaning too far and tramples the beliefs of others. Shame on him.&lt;br /&gt;&lt;br /&gt;Throughout history, ie., The enslavement of the Israelites, The Crusades, The Spanish Inquisition, Salem Witch Trials, The Holocaust; religion has been the sticking point and reason for actions against other humans. If you do not believe what another culture believes, well now that is a just reason to go kill them so that their beliefs cannot contaminate your beliefs.&lt;br /&gt;&lt;br /&gt;Hatred it seems is born of religious differences. This "my god is better than your god" mentality seems to rule the nations and cultures of the world. If you want to demonize someone, simply try your best to make others believe that person is has empathy or ties to a different religion, whether it is true or not.&lt;br /&gt;&lt;br /&gt;Now at the risk of offending everyone I know, I am turning further and further from so-called main stream religions. Why? Because I no longer trust that they have my best interest in mind. As a human being, I think I should not have to have my spiritual beliefs judged or measured by others. If I do not believe in the Bible, the Torah or the Koran as the word of God, the heads start shaking and the prayers for my salvation go out to protect...themselves I guess, from me.&lt;br /&gt;&lt;br /&gt;Now I am not a member of PETA or a tree hugger, but I think if I just take care of my corner of the world and hope that everyone else takes care of theirs, we would be living in a much better place. I don't think it necessary to encroach on others beliefs and hope that they will respect mine. Two years older than my dad will ever be. My mother who is an independent 73, just realized that she still has Christmas cards going out with both her and my dad's name on them. She broke out into laughter wondering what everyone must have thought. My brother Don is struggling at 52 with lung cancer that is not giving him a moment of peace. Is there a way to give him one more year, one more day, one more hour, one more minute, one more second? My brother Larry just celebrated turning 50 with a wonderful surprise party in his honor given by his wife. He and his friends sang all night as if they had never stopped singing. They are bandmates for life. My youngest brother still in his forties will become a grandfather in a matter of days.&lt;br /&gt;&lt;br /&gt;The strangeness of it all. I am in a waterfall that does not stop.&lt;br /&gt;&lt;br /&gt;These numbers keep falling away.&lt;br /&gt;&lt;br /&gt;Why do the numbers matter at all? We are obsessed with marking out the milestones in our lives and then pretending the number does not matter, when of course it does. It is how we compare and measure ourselves, where we are in our lives and how much time we may have left. That is the usual "unasked" milestone we quietly mark in our minds. We look at it with a fleeting but focused stare and then look away as if to confirm to ourselves that it does not matter...yet.&lt;br /&gt;&lt;br /&gt;When I was young, I could not wait to be a teenager.&lt;br /&gt;At 16, I could get a car.&lt;br /&gt;At 18, I can vote.&lt;br /&gt;When I become 21, I can go to the bar.&lt;br /&gt;And so on. I found myself wishing time would hasten so I could get on with my life.&lt;br /&gt;&lt;br /&gt;Now I just want it all to slow down so I can take it all in and enjoy every moment. It catches me off guard to realize that we are 10 years into the 21st century. Wasn't it just a second ago we were worried about our computers and y2k change-over?&lt;br /&gt;&lt;br /&gt;My daughter turned 33 this month, dammit! Is my son really almost 28...next month? When did I find time to have all these grandchildren?&lt;br /&gt;&lt;br /&gt;It is probably that we are in winter. People ponder the year that just went by. We take stock. We make lists of events that took place in the past year. We give one last solemn nod to those that we lost. So it is with each person to look back over the year that was so that the New Year can be greeted with excitement and hope. I find myself doing this today.&lt;br /&gt;&lt;br /&gt;Is there a way to freeze time, if only for a little while so that I can catch my breath. For this life is truly breathtaking. Asian's call this matter of pride "face" and go to great lengths to "save face."&lt;br /&gt;&lt;br /&gt;I honestly don't know how to break down the current barrier that has gone up between me and another family member. Yet I value this person still. I find myself dug in and unwilling to budge. This is truly unfortunate for I understand well the cost.&lt;br /&gt;&lt;br /&gt;So here I am at a crossroads. Unwilling to swallow bitter fruit. I fear I am at a loss and words now fail me. I know I should probably let it go, but cannot. White paper and scissors can make miraculous creations of wonder. Last year I made nearly a hundred of them. I decorated the office at school and all over my house. I kept most of them and took them all to school this time to decorate the office again.&lt;br /&gt;&lt;br /&gt;Our fourth grade teacher Ms. Fennell is temporarily on leave and her sub, Mrs. Boyle saw my little snowflakes and asked me to come to class to teach the kids how to make them. So I am making some more for show and tell.&lt;br /&gt;&lt;br /&gt;I think it will be fun to visit the class and watch them make cuts in the paper not know what they will get until they unfold them. That is the best part you know, unfolding them to see what you did. Is it the week before Thanksgiving already? I have friends making plans for shopping the day after Thanksgiving. We haven't even had our pumpkin pie and Christmas is exploding around me in decorations, party plans, Secret Santa Gifts and such. Somehow or other I still have to fit in four birthdays in-between all the holiday festivities...but where?&lt;br /&gt;&lt;br /&gt;I could have sworn when I last looked at the calendar, it was to plan for school buying. How on earth did the last few months fly by at the speed of light. It is really disconcerting. I am trying to catch my wind and before I know it we will be toasting in the new year 2010!&lt;br /&gt;&lt;br /&gt;Has it really been 10 years since the whole world held its collective breath on whether or not Y2K would spell digital doom for the world's computer heartbeat? Looking back, that was such a non-event.&lt;br /&gt;&lt;br /&gt;I have actually managed to start my shopping early to get a jump on things, but for whatever reason the faster I go the behinder I get. It has been amazingly beautiful out here in Omaha with perfect warm weather. True you have to rake the leaves now, but the smell of autumn is rich and rustic. It brings to mind younger days when piling up leaves and jumping in them to watch them scatter was endless fun. The only sad thing, most of the leaves are down and the colorful leaves we saw just two weeks ago are not so beautiful after turning brownish-gray.&lt;br /&gt;&lt;br /&gt;My dogs spent the day out with Jeff yesterday and really enjoyed the warmth of the sun while just hangin' out with dad.&lt;br /&gt;&lt;br /&gt;My brother and his family came up from Texas to go pheasant hunting with my husband, son and other brother. Usually hunting is a cold-weather affair and learning how to hunt while your fingers and toes are starting to numb is the norm. But not this weekend, gorgeous weather fit for short-sleeves and hunter orange vests were all that was needed. Of course, warmer weather made game a bit harder to catch, but we had yummy pheasant for dinner Friday night.&lt;br /&gt;&lt;br /&gt;Jeff has already winterized the house and put plastic on most of the windows to shut out frigid winter winds that will blow through homes regardless of how well built. But the kitchen window and southern dinning room windows are still uncovered, so we threw open the windows for the gentle warm breezes that carried in the autumn fragrances to make the whole house smell fresh for the week.&lt;br /&gt;&lt;br /&gt;Although we were at an inside event, my granddaughter Jocelyn and I spent yesterday at a basketball tournament. We did take time in-between games to go outside and enjoy the sun.&lt;br /&gt;&lt;br /&gt;And lastly, as if to put the exclamation point on an already "perfect day," Nebraska beat Oklahoma in a classic football contest. Kidding aside, he is very motivating for this voice that I just met a little over a week or so ago. He is pushing me outside my comfort zone and into writing with a goal in mind. He swears this will be a transformative experience and that I won't regret it.&lt;br /&gt;&lt;br /&gt;Okay, he only had to push a little. He was very convincing.&lt;br /&gt;&lt;br /&gt;So now I find myself officially committed to attempting to write 50,000 words in 30 days. What the hell?!&lt;br /&gt;&lt;br /&gt;I had no freaking idea what to even write, but in telling him about my husband, Rick yelled out, "There's your story!" I had to stop and think about it for a second, but he was right. Jeff is the perfect basis for a character for my 50,000 word novel in a month.&lt;br /&gt;&lt;br /&gt;Now I am excited. I literally could not get to the site fast enough &lt;a href="http://www.nanowrimo.org/"&gt;http://www.nanowrimo.org/&lt;/a&gt; to get myself officially entered in the grand experiment.&lt;br /&gt;&lt;br /&gt;This will be a fun book to write because Jeff is my favorite person and although this will be a work of fiction, I can't wait to dedicate it to him. And the big "IF" I actually accomplish something that is worthy of publishing, I will be thanking that little voice in my head for the big push. But I feel a lot of push-back on convenience foods. They are often over processed. I don't trust the source of where the processed foods come from, and I don't like any additives or preservatives that they often put in foods to make them last longer in the market on the shelves.&lt;br /&gt;&lt;br /&gt;I like to buy my foods from the farmer's markets and try to get foods locally when I can. I like to cook fresh foods from scratch so I know what and where the ingredients come from and that there are no hidden ingredients that I did not put in.&lt;br /&gt;&lt;br /&gt;For all of you cooks who have ever made hash browns from scratch and ended up with less than desired results, I used to flunk at hash browns. But I am happy to report that I have solved the home-made hash brown riddle.&lt;br /&gt;&lt;br /&gt;In the past, I have painstakingly sliced potatoes by hand getting uneven slices. I have hand grated them to get more evenly sized hashbrowns. I used a food processor to grate them in a flash. I have sliced my potatoes with the hash brown slicing blade of my expensive &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;mandoline&lt;/span&gt; that I bought at an upscale kitchen gadget store at the mall.&lt;br /&gt;&lt;br /&gt;Once I had the perfect sliced taters, I would invariably mess them up in the grease as they stuck to my perfectly seasoned cast iron skillet. I would mutter to myself as I would try to flip the hash browns but always losing some to bottom of the pan which had welded themselves in place. I would have to use a chisel and hammer to get them off the bottom or boil them off while cleaning.&lt;br /&gt;&lt;br /&gt;What was I doing wrong?&lt;br /&gt;&lt;br /&gt;The insides of the potatoes were a gluey texture inside and not very palatable. The outsides were crisp and done, but the insides were not. Hmmm? Maybe the oil was not hot enough. I upped the heat. They burned.&lt;br /&gt;&lt;br /&gt;I tried using different types of spuds; red, russet, golden... I got mixed results. The nests of hash browns would still suffer from uneven browning ranging from very light to blackened round the edges. Sometimes the potatoes would weld themselves to the spatula.&lt;br /&gt;&lt;br /&gt;I tried rinsing off the excess potato starch by giving them a swish in a bath of ice cold water and toweling them off until dry with an entire roll of paper towels.&lt;br /&gt;&lt;br /&gt;I tried using different oils; vegetable, corn, canola, and against my better judgement, artery clogging vegetable shortening. I use about 3/4" of oil in my skillet. Then it hit me,  restaurants use deep fryers with baskets.&lt;br /&gt;&lt;br /&gt;The potatoes at the restaurants don't have a chance to stick to the bottom because they fry so quickly and evenly in the deep oil. Well this is my problem, I don't have a deep fryer. I will think about getting one, but in the mean time, I still have to make due with the skillet that I have.&lt;br /&gt;&lt;br /&gt;So I cut up my simple red potatoes (skins on) with my trusty mandoline for perfect hash brown slices onto a doubled up sheet of paper toweling, I took another doubled up paper towel and blotted the potatoes thoroughly to get rid of excess moisture.&lt;br /&gt;&lt;br /&gt;I heated 3/4" of canola oil in my skillet. I put in the potatoes, BUT instead of letting them sit there to cook on the one side before flipping them, I kept them moving. I used my wooden spatula to keep them from touching the bottom of the skillet for any length of time. I kept stirring them in the oil as if they were in a deep fryer, and they cooked very evenly. Plumes of steam came off the oil getting rid of the unwanted moisture in the potatoes that would turn them gloppy. The outsides crisped perfectly and I finally had achieved the perfect hash brown.&lt;br /&gt;&lt;br /&gt;I gathered them up quickly with my largest asian frying-strainer spoon and placed them on paper toweling to drain excess oil. I am retired from graphic design (except for the occasional project from my friends at Creighton University.)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;I thought about designing my new blog in the latest iteration of Word Press, but every time there is an update I fall behind in updating the code and things eventually stop working. I guess I just don't want to work that hard anymore to put my thoughts out there. The excitement of designing and creating my own blog has worn off and I just want to write and not worry about code updates. Blogger is an easy add to my Google lifestyle. Yes, I miss my PandaPause site, but there you go, stuff stopped working and eventually I could no longer post.&lt;br /&gt;&lt;br /&gt;My new daily journal/blog is called "Through the looking glass" because I have always been a fan of Alice and her madcap adventures. This seemed appropriate for my own madcap reflections on being a wife, a daughter, a sister, a mom and a grandmother. I will also be reflecting on my adventures at my new career working in an elementary school and loving every minute. Who'd have thought it, I love working at Miller Park Elementary School.&lt;br /&gt;&lt;br /&gt;I am also writing in earnest at &lt;a href="http://www.webook.com/"&gt;www.Webook.com&lt;/a&gt; which is a community of writers and would-be published authors. I have met and joined a sub group there called &lt;span style="font-style: italic;"&gt;The Crucible&lt;/span&gt;, who meet in a weekly round-table on Skype. We discuss writing, editing, ideas and push each other to meet goals in writing. They help me grow as a writer and I am excited to actually work at my writing, to make it better. Let's just say, I love our President and I am not going to apologize for that.&lt;br /&gt;&lt;br /&gt;Lastly, although I love the social aspect of Facebook and Twitter, it is a great time waster. I don't plan to quit either, but I am going to resolve to limit myself to two times a day on both of those sites. And what can I say about my other time-wasting hobby, poker... I've reached $1M on Facebook Poker and I continue to lose at PokerStars. UGH! It is super frustrating.
